INGREDIENTS

2 tbsp Extra Virgin Olive Oil 

1 Brown onion, finely diced 

500g Beef mince 

4 tbsp Mexican spice blend, store-bought 

400g Edgell Canned black beans, drained and rinsed

OPTIONAL

1 Lime, juiced

TO SERVE

Salsa, store-bought Sour Cream

RICE

2x 250g SunRice Microwave Rice 

or 

1½ cups SunRice rice, uncooked

Black beans - Substitute for beef mince

STEP 1 - PREP

  • Dice onions
  • Cook rice as per the instructions on the packet

STEP 2 - COOK

  • In a large frypan, cook onion in oil for 2-3 minutes on medium heat
  • Add the beef mince
  • Once browned, add the spice blend and
    black beans, stirring for 1-2 minutes

STEP 3 - SERVE

  • Add mince to rice, topped with salsa, sour cream and lime (if using)

PRO TIP - STORAGE

  • Store your left over rice in a sealable, microwave-friendly tub for another day.
