Ingredients

500g Chicken tenderloins 

250g punnet Tomatoes, diced 

2 Lebanese Cucumber, diced 

¾ cup pitted Kalamata Olives, chopped 

½ Red onion, finely sliced

Optional

100g Greek-style Fetta cheese 

Tzatziki, store-bought

Marinade

4 tbsp Lemon and Herb seasoning mix 

2 tbsp Extra Virgin Olive Oil

Rice

2x 250g SunRice Microwave Rice 

or

1½ cups SunRice rice, uncooked

Step 1 - Prep

  • Marinate chicken with oil and seasoning mix for 5 minutes
  • Chop vegetables for salad
  • Cook rice as per the instructions on the packet

Step 2 - Cook

  • Over a large frypan, cook chicken in oil for
    3-4 minutes per side over medium heat
  • Remove from the pan, set aside to rest

Prep 3 - Serve

  • Serve grilled chicken with rice, salad, feta cheese (if using) and a dollop of tzatziki

Pro Tip - Serve

  • Store your left over rice in a sealable, microwave-friendly tub for another day.
