Beef, Broccoli & Cashew

INGREDIENTS

500g Rump beef, sliced (or stir fry beef strips) 

1 tbsp Oil 

1 Brown onion, sliced 

3 cups Birds Eye Frozen Veggie Mix, of your choice

OPTIONAL

1/3 cup cashew nuts

MARINADE

1/2 cup Teriyaki sauce, store-bought

RICE

2x 250g SunRice Microwave Rice 

or 

1½ cups SunRice rice, uncooked

STEP 1 - PREP

  • Pour the Teriyaki sauce in bowl & combine with sliced Rump beef  
  • Slice brown onion
  • Cook rice as per the instructions on the packet

STEP 2 - COOK

  • Add oil, beef and onion into wok on medium-high heat for 2 minutes
  • Add half the sauce and frozen vegetables, mix for 3-4 minutes
  • Add the remainder of the sauce and cook for 2-3 minutes

STEP 4 - SERVE

  • Serve beef with cooked rice
  • Top with cashews (if using) and
    gently stir through

PRO TIP - STORAGE

  • Store your left over rice in a sealable, microwave-friendly tub for another day.
