Vegetable Rice Side

INGREDIENTS

1 tbsp Olive Oil 

1 Brown onion, diced 

3 cloves Garlic, crushed 

2-3 cups Birds Eye Frozen Veggie Mix, of your choice

4 cups Vegetable Stock

RICE

2 cups SunRice rice, uncooked (If using Basmati, rinse rice 3-4 times to remove starch)

STEP 1 - PREP

  • Cook onion and garlic in olive oil for 1-2 minutes in pot over medium to high heat
  • Add vegetables and stir for 2-3 minutes

STEP 2 - COOK

  • Add in the rinsed rice & stock and cover
  • Cook until liquid has been absorbed

STEP 3 - SERVE

  • Once liquid is absorbed, fluff up the rice with a fork
  • Serve with protein of your choice (try Steak)

PRO TIP - STORAGE

  • Store your left over rice in a sealable, microwave-friendly tub for another day.
