Walnut, Cucumber & Peach Salad
Method
Cook the rice following absorption instructions on the packet, remove from the heat, spoon into a colander. Refresh rice in cold water, set aside in colander to drain really well. Transfer to a large bowl.
Add the peach, cucumber, onion, parsley and walnuts to the rice. Drizzle over olive oil and lemon juice. Season with salt and pepper and stir gently to coat.
Arrange the butter lettuce over a large serving platter. Spoon over the rice and serve. Serving suggestion: Serve with ham, turkey or roast chicken.
