  1. Heat oil in a saucepan over moderate heat and cook onion and garlic for 2 minutes without color. Add rice and cook for 2 minutes, stirring continuously.

  2. Add 1 cup of stock at a time, stirring until absorbed before each new addition until rice is just tender.

  3. Stir in prawns, spinach, butter, salt and pepper. Continue to cook over low heat, covered, for 2 minutes or until prawns are cooked.

  4. Season with salt and pepper if required and serve.
