Prawn Fried Rice

Prawn Fried Rice
Method
Rinse rice very well, until water runs clear, then place in a bowl of cold water for 30 minutes. Drain, then combine in a saucepan with 3 cups of water and a pinch of salt. Put over a high heat and bring to the boil. Once craters appear, cover and reduce heat to low. After 5 minutes, remove from heat and allow rice to stand for 15 minutes. Fluff with a fork.
Heat half of the oil in a wok or large frying pan over a medium-high heat. Cook eggs, tossing as they cook to break them up. Set aside.
Increase heat to high. Add remaining oil in same pan. Add rice, ham, shallot, prawn, peas and egg. Stir-fry until prawns are warm and ham is starting to brown. Stir through soy sauce. Spoon into serving bowls. Garnish with green onion to serve.
