Easy Rice Salad
Method
Combine all the dressing ingredients in a large bowl, season with salt and pepper and whisk until well combined.
To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.
Add the warm rice to the dressing, stir to coat. Cover and set aside 10 minutes.
Just before serving add the cherries, cucumber, chilli, parsley and coconut. Toss to combine. Spoon into a serving bowl, crumble over the cheese. Serve cold or at room temperature.
Tip: If the cherries are large cut them in half, salad looks great with some cherries whole and some halved.
