This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1⅓ cup SunRice Black Rice

  • 3 Ripe Peaches (diced)

  • 1 Lebanese Cucumber (diced)

  • 1 Spring Onion (thinly sliced into rounds)

  • cup Parsley (chopped)

  • ½ Lemon (juiced)

  • cup Extra Virgin Olive Oil

  • 1 cup Walnut Pieces (toasted)

  • 8 leaf Butter Lettuce

Method

  • Cook the rice following absorption instructions on the packet, remove from the heat, spoon into a colander. Refresh rice in cold water, set aside in colander to drain really well. Transfer to a large bowl.

  • Add the peach, cucumber, onion, parsley and walnuts to the rice. Drizzle over olive oil and lemon juice. Season with salt and pepper and stir gently to coat.

  • Arrange the butter lettuce over a large serving platter. Spoon over the rice and serve. Serving suggestion: Serve with ham, turkey or roast chicken.
