Brown Rice Chip Nachos

This is a seriously awesome starter or appetiser to take to a party. I got so many compliments when I made this recipe and I hope you do too. It’s crispy, full of flavour and easy! Save this recipe for your next party and impress your pals.

Ingredients to serve:

This recipe was originally designed for 8 people. Amended serving sizes for 1, 2, 4, and 6 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 150 g SunRice Brown Rice Chips Sea Salt and/or Wild Rice

  • 1 Avocado

  • 500 g Tomatoes

  • Red Onion

  • 50 g Feta

  • cup Coriander

  • 1 Red Chilli

  • 50 g Pine Nuts (toasted)

  • 2 tbsp Extra Virgin Olive Oil

  • 1 tbsp Lime Juice

  • 1 tbsp Sriracha or Hot Sauce

  • Chop all the ingredients (except for the brown rice chips).

  • Arrange the brown rice chips on a platter.

  • Make the dressing by combining the lime juice, olive oil and sriracha.

  • Layer with the rest of the ingredients on top of the brown rice chips and pour the dressing on top. Do this step as close to serving as possible to keep it all crispy!
