SunRice Jasmine Fragrant Rice

Jasmine rice is a long grain varietal that is perfect in southeast Asian style dishes. It is often used in stir frys and curries as the natural fragrance compliments many spices. This grain will be slightly sticky but still fluffy. Its separating qualities and fragrance, make it a great choice for a wide variety of fried rice, stir fry and curry recipes. SunRice Jasmine rice, is known for its delicious fragrance. Use this rice to create a dish that evokes the sights and sounds of Southeast Asia, from the street vendors of Bangkok to Saigon. For best results, rinse this rice before cooking and cook without salt to preserve its fragrance. All rice is naturally gluten free.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 450 g SunRice Steamed Jasmine Rice Family Pack

  • 1 tbsp Vegetable Oil

  • 600 g Chicken Thigh Fillets (chopped)

  • 150 g Snow Peas (trimmed and halved)

  • 2 Long Red Chillies (thinly sliced)

  • 285 g Light Coconut Cream

  • cup Crunchy Peanut Butter

  • 1 tbsp Ginger Root (finely grated)

  • 1 tbsp Gluten Free Hot Chilli Sauce

  • 2 tbsp Gluten Free Soy Sauce

  • 1 tbsp Raw Sugar

Method

  • Heat oil in a large non-stick frying pan over a high heat. Add chicken and stir-fry for 5 minutes, until browned.

  • Reduce heat slightly. Add snow peas and chillies and stir-fry for 2 minutes longer.

  • Add coconut cream, peanut butter, ginger, chilli sauce, soy sauce and sugar. Stir to combine. Simmer, stirring occasionally for 3-5 minutes until chicken is cooked through and sauce thickens.

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet. Serve satay chicken with rice and enjoy!
