Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1⅓ cup SunRice White Long Grain Rice

  • 2 tbsp Vegetable Oil

  • 480 g Diced Chicken (thigh fillet or breast filet)

  • 240 g Spanish Chorizo Sausage (sliced)

  • 1 tsp Garlic (crushed)

  • 1 Medium Onion (sliced)

  • 1 Red Capsicum (sliced)

  • 2 stick Celery (sliced)

  • 4 tbsp Tomato Paste

  • 2 cup Chicken Stock or Water

  • 1 pinch Salt and Pepper (to taste)

  • 1 tsp Cayenne Pepper

  • 1 tsp Ground White Pepper

  • 1 tsp Ground Black Pepper

  • ½ tsp Dried oregano

  • ½ tsp Dried Thyme

  • 2 Bay Leaves

Method

  • To cook the white rice, in a saucepan, add 1 cup of rice to 2 cups of cold water and bring to the boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. If you are not sure how, we have a helpful “How to Cook rice section” to make you a pro. If you would like to use a brown rice in this recipe, simply add an additional ½ a cup of water.

    Tip: For a quicker alternative, we also have a range of ready rices, that are ready to eat in 90 seconds!

  • In a small bowl mix all Cajun seasoning ingredients together. TIP: You can use a ready prepared Cajun spice mix.

  • Heat oil in a saucepan, add chicken and brown slightly then add sausage.

  • Add vegetables and gently cook for 2 - 3 minutes.

  • Sprinkle in 1 and ½ teaspoon of the seasoning and stir then add tomato paste and pour in the stock.

  • Simmer until chicken and vegetables are cooked then add the rice and serve.
