Warm Roast Vegetable Salad with Feta
Method
Preheat oven to 225C. Place sweet potato, onion and capsicum on a shallow- sided oven tray. Drizzle with olive oil and toss to coat. Roast 15 minutes, until tender. Tip: Substitute sweet potato for pumpkin, if preferred.
To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.
Place rice and roasted vegetables in a bowl and toss to combine. Add reserved oil and gently stir. Top with rocket, feta, and pine nuts.
