Thai Baked Fish
Method
Preheat oven to 200C. Place fish, side-by-side into a small baking dish.
Place curry paste and coconut milk in a bowl and whisk with a fork to combine, then pour over fish. Cover with foil and bake 10 minutes. Remove foil and continue cooking for 5 minutes or until fish is just cooked.
To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet. Divide rice between two bowls.
Serve fish with rice and beans. Top with Thai basil leaves and chilli, if desired.
