Red Rice Mediterranean Bowl by @_plantbaes_
Method
Preheat the oven to 200C
Toss the chickpeas, tomatoes, zucchini, broccoli and capsicum with olive oil, cumin and salt. Transfer to the oven with the garlic still in its skin and cook for 20 minutes.
Remove the skin of the garlic, and add to a small blender with the tahini, basil, lemon juice, and red capsicum. Blend until smooth.
Tear the rice pouch slightly and cook in the microwave for 90 seconds.
To a bowl, add the rice, roasted vegetables, chickpeas, spinach, cucumber, and black olives. Drizzle with the dressing, and enjoy!
