Pumpkin & Chicken Rice Bake
Method
Preheat oven to 180 degrees.
Heat oil in an ovenproof dish on top of the stove.
Season chicken pieces and add to hot oil, turning until lightly browned.
Add onion and place into the oven for 5 minutes.
Add uncooked SunRice Jasmine Rice, chicken stock, rosemary, bay leaves and stir.
Place a lid on top of the dish and bake in the oven for about 10 minutes.
Open the dish, add pumpkin and stir through, cover and bake in the oven for a further 15 minutes or until all ingredients are cooked.
Check seasoning and serve individually in bowls or on a large platter to share.
