Norma’s Vegetarian Stir Fried Rice
Method
Wash rice till the water runs clear to remove the starch.
In a small pot add the rice with 3 cups of boiling water, stir once and bring to a boil. Reduce to a low heat and place a lid on. Fluff rice up once cooked. Set aside.
In a wok or pan add the oil and sauté the onion till it softens, then add your vegetables of choice and cook.
Once your vegetables are almost cooked, stir in your sauces and add your rice, seasoning to taste. Top with cashews and spring onions to serve.
