Method


  1. Heat a wok or large frying pan over high heat. Add the oil. Swirl to coat the base of the wok or pan. Add the egg. Swirl to form a thin omelette. Cook for 30 seconds or until the egg is light golden underneath and just set on top. Slide out onto a board. Roll the egg into a log. Transfer to a plate, cover to keep warm.

  2. Add the bacon to the wok or pan. Cook, stirring, for 3 minutes or until browned. Add the red and green capsicum. Stir to combine.

  3. Add the SunRice Special Fried Rice, stir fry, for 2½ minutes until the rice is warmed through. Slice the egg crossways. Stir through the rice.

  4. Combine the soy and toasted sesame. Serve with the fried rice and lime wedges if using.
