Jasmine rice is a long grain varietal that is perfect in southeast Asian style dishes. It is often used in stir frys and curries as the natural fragrance compliments many spices. This grain will be slightly sticky but still fluffy. Its separating qualities and fragrance, make it a great choice for a wide variety of fried rice, stir fry and curry recipes. SunRice Jasmine rice, is known for its delicious fragrance. Use this rice to create a dish that evokes the sights and sounds of Southeast Asia, from the street vendors of Bangkok to Saigon. Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1 packet SunRice Jasmine Rice

  • 3 tbsp Laksa Paste

  • 250 ml Low Salt Vegetable or Chicken Stock

  • 400 ml Low Fat Coconut Milk

  • 200 g Chicken Breast (meat thinly sliced)

  • 1 Red Capsicum (sliced)

  • 50 g Baby Corn

  • 50 g Snow Peas

  • 1 Lime Juice

  • 1 handful Coriander Leaves (chopped)

Method

  • Combine laksa paste, stock and coconut milk. Bring to the boil over a medium heat.

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.

  • Add the chicken, capsicum, corn and snow peas to pan.

  • Simmer for 3 minutes until the chicken has cooked through.

  • Add the lime juice and coriander.

  • Divide rice between serving bowls.

  • Ladle in the hot soup, including chicken and vegetables then serve immediately.
