Brown Rice Salad with Roast Vegetables

Method


  1. Preheat the oven to 200°C fan forced. Combine the oil and garlic. Place the sweet potato in a single layer on a microwave-safe plate. Cover with damp paper towel. Microwave for 3 minutes on High/100%.

  2. Arrange the hot sweet potato, zucchini and onion in a roasting pan. Spoon over the garlic oil, season and turn to coat the vegetables. Roast for 35 minutes, turning once during cooking.

  3. Add the tomatoes to roast vegetables. Roast a further 5 minutes. Set aside to cool for 5 minutes.

  4. Warm the SunRice Microwave Brown Rice sachet for 90 seconds in the microwave. Tip into a bowl.

  5. Combine all the dressing ingredients in a bowl. Season. Whisk until well combined. Pour the dressing over the warm SunRice and stir gently to combine. Stand 5 minutes then add the roast vegetable and spinach to the SunRice, stir gently to combine. Serve.
