Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 250 g SunRice Steamed Brown Rice

  • 200 g Sweet Potato (peeled and diced)

  • 1 Small Red Onion (cut into wedges)

  • ½ Red Capsicum (cut into strips)

  • 2 tsp Olive Oil

  • 1 cup Baby Rocket

  • 100 g Persian Feta (reserve 1 tablespoon oil)

  • 2 tbsp Toasted Pine Nuts

Method

  • Preheat oven to 225C. Place sweet potato, onion and capsicum on a shallow- sided oven tray. Drizzle with olive oil and toss to coat. Roast 15 minutes, until tender. Tip: Substitute sweet potato for pumpkin, if preferred.

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.

  • Place rice and roasted vegetables in a bowl and toss to combine. Add reserved oil and gently stir. Top with rocket, feta, and pine nuts.
