SunRice Jasmine Fragrant Rice

Jasmine rice is a long grain varietal that is perfect in southeast Asian style dishes. It is often used in stir frys and curries as the natural fragrance compliments many spices. This grain will be slightly sticky but still fluffy. Its separating qualities and fragrance, make it a great choice for a wide variety of fried rice, stir fry and curry recipes. SunRice Jasmine rice, is known for its delicious fragrance. Use this rice to create a dish that evokes the sights and sounds of Southeast Asia, from the street vendors of Bangkok to Saigon. For best results, rinse this rice before cooking and cook without salt to preserve its fragrance. All rice is naturally gluten free.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1⅓ cup SunRice Jasmine Fragrant Rice

  • 1 Onion (sliced)

  • 300 g Skinless Chicken Breast (sliced)

  • 1 Green Capsicum (sliced)

  • 1½ tbsp Thai Green Curry Paste

  • 400 ml Light Coconut Milk

  • 250 ml Chicken Stock

  • 100 g Snow Peas (topped and tailed)

  • 1 bunch Coriander (chopped)

Method

  • To cook the white rice, in a saucepan, add 1 cup of rice to 2 cups of cold water and bring to the boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. If you are not sure how, we have a helpful “How to Cook rice section” to make you a pro. If you would like to use a brown rice in this recipe, simply add an additional ½ a cup of water.

    Tip: For a convenient alternative, we have a range of microwave rice. Ready to eat in 90 seconds!

  • Saute the onion and chicken in a hot pan for 2 minutes until browned.

  • Add the capsicum, curry paste, coconut milk and stock.

  • Cook for another 2 minutes to heat through.

  • Add the snow peas and coriander and cook for another minute.

  • Serve the curry over cooked SunRice Jasmine Fragrant Rice.
