Thai Beef Salad in 5

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 250 g SunRice Basmati Rice Pouch

  • 400 g Beef Strips (cooked)

  • 1 Cucumber (ribbons)

  • ½ cup Cherry Tomatoes

  • ¼ cup Mint

  • 2 tbsp Crushed Peanuts

  • 2 Red Onion Slices

  • 4 tbsp Thai Dressing

  • To prep your cucumber ribbons, use a vegetable peeler to peel down the length of the cucumber and place each strip in a bowl and drizzle with some Thai dressing and set aside. You can cut your remaining cucumber pieces into slices and add them to the bowl.

  • Cook your SunRice Microwave Basmati Rice in the microwave for 90secs and place it on a serving plate. To form a mini dome, simply place your rice into a small bowl and turn it onto your plate.

  • Re-heat your beef for 30-60secs in the microwave.

  • To plate your meal, roll your cucumber into spirals and place it onto your plate with the tomato and mint. Place your beef on the plate and drizzle with a good serving of the Thai dressing and enjoy.
