SunRice White Medium Grain Rice

Medium Grain Rice is a round, tender and succulent grain, allowing it to lock in moisture when it is cooked. This rice is often used in dishes that require a bit more creaminess, like paella or risotto. It is also ideal in your favourite Middle Eastern, Korean and Spanish dishes and is a good choice for delicious desserts. All rice is naturally gluten free.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 350 g SunRice White Medium Grain Rice

  • 1 pinch Turmeric (ground)

  • 1½ clove Cloves

  • 2½ tbsp Soy Sauce

  • 700 ml Coconut Milk

  • ½ stick Cinnamon Stick

  • 1 Lemongrass Stalk (flattened)

  • 2 Onions (sliced into rings)

  • 1 tsp Rice Flour

  • ½ cup Vegetable Oil (for deep-frying)

  • 1 Cucumber (cut in slices)

  • 1 tsp Chives (chopped)

Method

  • Add a pinch of turmeric, the cinnamon, cloves, lemon grass and soy sauce to the coconut milk and bring to the boil. Add the rice, cover and cook over a low heat for around 20 minutes.

  • Mix the onions and flour together and fry in the hot oil for 4-5 minutes until golden brown. Drain on kitchen paper.

  • Remove the cinnamon, cloves and lemon grass from the rice, season to taste with soy sauce and divide between bowls. Serve garnished with onions, cucumber and chives.
