SunRice White Medium Grain Rice

Medium Grain Rice is a round, tender and succulent grain, allowing it to lock in moisture when it is cooked. This rice is often used in dishes that require a bit more creaminess, like paella or risotto. It is also ideal in your favourite Middle Eastern, Korean and Spanish dishes and is a good choice for delicious desserts. All rice is naturally gluten free.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1½ cup SunRice Naturally organic White Rice

  • 1 tbsp Olive Oil

  • 1 Red Onion (finely chopped)

  • 1 tbsp Ginger (finely grated)

  • 2 clove Garlic (crushed)

  • 2 tsp Ground Cumin

  • 3 tsp Lemon Rind (finely grated)

  • 2½ cup Hot Salt Reduced Chicken or Vegetable Stock

  • 2 cup Pumpkin (roasted chopped)

  • 400 g Can Chickpeas (drained and rinsed)

  • 50 g Baby Spinach Leaves

Method

  • Heat oil in a large saucepan. Add onion and cook until softened. Add ginger, garlic and cumin to the pan and stir over a low heat for 2 minutes. Add rice, lemon rind and cardamom pods and stir for 2 minutes longer.

  • Pour in the hot stock and stir to combine. Cook over a low heat, stirring occasionally for 30 minutes or until all the liquid is absorbed and rice is tender.

  • Add pumpkin, chickpeas and spinach and stir until heated through.
