SunRice Jasmine Fragrant Rice

Jasmine rice is a long grain varietal that is perfect in southeast Asian style dishes. It is often used in stir frys and curries as the natural fragrance compliments many spices. This grain will be slightly sticky but still fluffy. Its separating qualities and fragrance, make it a great choice for a wide variety of fried rice, stir fry and curry recipes. SunRice Jasmine rice, is known for its delicious fragrance. Use this rice to create a dish that evokes the sights and sounds of Southeast Asia, from the street vendors of Bangkok to Saigon. For best results, rinse this rice before cooking and cook without salt to preserve its fragrance. All rice is naturally gluten free.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1 cup SunRice Jasmine Fragrant Rice

  • 8 Chicken (cut into eight)

  • 4 tbsp Vegetable Oil

  • 2 Medium Brown Onions (cut into eights)

  • 500 ml Chicken Stock

  • 1 Medium Pumpkin (peeled and cut into large chunks/cubes)

  • 1 bunch Fresh Rosemary

  • 2 Bay Leaves

  • 1 pinch Salt

Method

  • Preheat oven to 180 degrees.

  • Heat oil in an ovenproof dish on top of the stove.

  • Season chicken pieces and add to hot oil, turning until lightly browned.

  • Add onion and place into the oven for 5 minutes.

  • Add uncooked SunRice Jasmine Rice, chicken stock, rosemary, bay leaves and stir.

  • Place a lid on top of the dish and bake in the oven for about 10 minutes.

  • Open the dish, add pumpkin and stir through, cover and bake in the oven for a further 15 minutes or until all ingredients are cooked.

  • Check seasoning and serve individually in bowls or on a large platter to share.
