This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 cup SunRice Arborio Risotto Rice

  • 2 tbsp Olive Oil

  • 1 Onion (chopped)

  • 2 clove Garlic (crushed)

  • 1 cup Vegetable or Fish Stock

  • 750 g Uncooked King Prawns (peeled, deveined and halved length-ways)

  • 4 cup Baby Spinach

  • 30 g Butter

  • 1 pinch Salt and Pepper

  • Heat oil in a saucepan over moderate heat and cook onion and garlic for 2 minutes without color. Add rice and cook for 2 minutes, stirring continuously.

  • Add 1 cup of stock at a time, stirring until absorbed before each new addition until rice is just tender.

  • Stir in prawns, spinach, butter, salt and pepper. Continue to cook over low heat, covered, for 2 minutes or until prawns are cooked.

  • Season with salt and pepper if required and serve.
