Poh's Oyster Mushroom & Snowpea Stir Fry

This combo of seasonings goes with anything but it’s particularly good for a vegetarian option because the chilli bean sauce is so flavourful and adds an incredible depth of flavour to vegetables. Any variety of rice will suit this dish but because it’s a vegetarian dish I like pairing it with brown rice for its nuttiness and robust bite.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 3 cup SunRice Brown Rice

  • cup Olive Oil

  • 2 tbsp Ginger (shredded)

  • 3½ clove Garlic (peeled, finely chopped or crushed)

  • ½ cup Spring Onions (sliced)

  • 400 g Oyster Mushrooms

  • ½ cup Black Fungus (Cloud Ear) (soaked in cool water for 10 mins)

  • 250 g Snowpeas (top and tailed)

  • 3 tbsp Chilli Bean Paste (heaped)

  • 1 tbsp Nameless Aunty Brand Crispy Chilly Oil

  • 2 tbsp Shaoxin Rice Wine

  • 1 tbsp Chinese Black Vinegar

  • pinch Sugar

  • Light Soy (to taste)

Method

  • Cook the brown rice following packet instructions.

  • Bring the olive oil, ginger, garlic and spring onions in a large non-stick frypan or wok to a high heat. When the aromatics start to become fragrant and turn the palest of golden, add the mushrooms and black fungus.

  • Stir fry until the mushrooms are cooked through, then add the snowpeas with the remaining seasonings. Stir fry for only a few seconds, then remove the frypan off the heat a beat sooner than you feel comfortable and the residual heat will do the rest.

  • Taste to see of more seasoning is required. If so, add light soy to taste.

  • Serve immediately with the steamed brown rice.
