Mexican Style Fried Rice

A colourful and delicious twist to satisfy mid-week, this meal will be on the table in under 20 minutes!

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 450 g SunRice Mexican Style Rice Pouch

  • 400 g Black Beans (drained, rinsed)

  • 1 cup Carrots (diced or frozen)

  • ⅔ cup Fresh or Frozen Peas

  • ⅔ cup Corn (fresh, frozen or can)

  • 4 Mini Capsicums (sliced crossways)

  • 1 Avocado (sliced)

  • 8 Cherry Tomatoes (sliced)

  • Coriander Leaves and Lime Wedges (to serve, optional)

Method

  • Stir fry your SunRice Mexican Style Rice for 1 minute in a lightly greased wok or medium-large pan.

  • Add the black beans, carrots, peas, corn and capsicum. Cook, stirring occasionally, for 2-3 minutes or until the vegetables are warmed though.

    Top with avocado and tomatoes. Season. Serve with coriander and lime wedges.
