Leeton Brown Rice Salad

Famous amongst our SunRice farmers, this brown rice salad is a sure winner

Ingredients to serve:

This recipe was originally designed for null people. Amended serving sizes for 1, 2, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • cup SunRice Brown Rice (cooked)

  • Shallots (sliced diagonally)

  • Red Capsicum (diced)

  • cup Currants

  • tbsp Sunflower Seeds

  • tbsp Pepitas or Cashews (add last to keep crunchy)

  • cup Sunflower Oil (must be sunflower and not another oil)

  • tbsp Soy Sauce (for serving)

  • tbsp Lemon Juice (for serving)

  • clove Garlic (crushed)

Method

  • Cook rice ahead of time and allow to cool. Add all the other ingredients except cashews.

  • Combine dressing ingredients in a bottle and shake well before pouring over rice mixture. Don’t be afraid to use all of the dressing as the rice will soak it up over time.

  • Add cashews around 1 hour before serving.
