Chicken Burrito Bowl in 5

Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 250 g SunRice Brown Rice Pouch

  • 400 g Cooked Chicken Breast (cooked)

  • 1 tsp Cajun Seasoning

  • 1 tsp Cooking Oil

  • ½ cup Canned Corn

  • ½ cup Canned Black Beans

  • 1 Avocado

  • ½ Red Onion

  • ½ cup Cherry Tomatoes (sliced)

  • 2 tbsp Balsamic Dressing

  • Place cooking oil in a medium pan on medium heat. Re-heat your chicken in the pan and sprinkle over cajun seasoning and cook for 3min. Set aside.

  • Heat your SunRice Microwave Brown Wholegrain Rice in the microwave for 90sec then place it in a large serving bowl.

  • Prep your vegetables, then carefully add the individual vegetables in sections on top of the rice.

  • Finally, place your cajun chicken on top and finish with a drizzle of balsamic dressing over your salad and enjoy.
