Method


  1. Preheat oven to 225C. Place sweet potato, onion and capsicum on a shallow- sided oven tray. Drizzle with olive oil and toss to coat. Roast 15 minutes, until tender. Tip: Substitute sweet potato for pumpkin, if preferred.
  2. Meanwhile, squeeze rice pouch to separate rice. Tear corner of pouch to vent heat. Microwave on high for 90 seconds (850W). Set aside.
  3. Place rice and roasted vegetables in a bowl and toss to combine. Add reserved oil and gently stir. Top with rocket, feta, and pine nuts.
