Method


  1. Place rice in a saucepan. Add 1 1/2 cups cold water and bring to the boil. Reduce heat and simmer, covered, for 25 minutes. Remove from heat and stand, covered, for 5 minutes. Spread rice onto a tray and refrigerate 15 minutes to cool. Tip: Substitute 250g pack of SunRice 90 second microwave rice. Heat as directed on pack, then cool
  2. Place a clean tea towel on a work surface. Dip 1 rice paper sheet in a dish of warm water for about 15 seconds or until pliable. Drain and lay on the tea towel.
  3. Place a mint leaf in the centre of the rice paper sheet. Place a little tuna, cucumber, avocado, carrot, green onion, mint and coriander along the centre of the sheet. Fold in ends and roll up securely to enclose filling. Repeat with remaining rice paper sheets and filling ingredients. Serve with dipping sauce. Tip: Vietnamese dipping sauce is available in the Asian foods aisle of most supermarkets.
