- Preheat oven to 200C. Place fish, side-by-side into a small baking dish.
- Place curry paste and coconut milk in a bowl and whisk with a fork to combine, then pour over fish. Cover with foil and bake 10 minutes. Remove foil and continue cooking for 5 minutes or until fish is just cooked.
- Meanwhile, squeeze rice pouch to separate rice. Tear corner of pouch to vent heat. Microwave on high for 90 seconds (850W). Divide rice between two bowls.
- Serve fish with rice and beans. Top with Thai basil leaves and chilli, if desired.
