- Slash each chicken fillet with 2 long cuts (not all the way through). Place chicken and half the marinade in a bowl and stir to coat. Note: Bottles of Peri-Peri marinade are available in ‘medium’ and ‘hot’ varieties. They can be found in the sauces section of the supermarket.
- Cover an oven grill plate with a double thickness of foil and turn up edges slightly. Place chicken on prepared grill plate, slashed side down. Preheat oven grill to high, then place chicken under the grill for 3 minutes. Turn chicken, then spread reserved marinade evenly over top of chicken and cook for 5 minutes longer or until just cooked through.
- Meanwhile, squeeze rice pouch to separate rice. Tear corner of pouch to vent heat. Microwave on high for 2 1/2 minutes (850W). Set aside.
- Divide rice between 4 bowls, top with chicken and spoon over juices from the grill plate. Serve with beans and lime wedges, if desired.
