Method


  1. Heat half the oil in a large pan over a high heat. Add the lamb and cook, stirring until brown. Remove from pan.
  2. Add remaining oil to pan and reduce heat. Cook onions and capsicum until soft. Add cumin, ground coriander, chilli flakes and ginger and cook, stirring for 1 minute. Add lemon rind, tomatoes, apricots and 1/3 cup water. Cover and simmer for 50 minutes, stirring occasionally. Add beans and cook, covered for 10 minutes longer or until lamb and beans are tender.
  3. Meanwhile, cook Rice and Barley according to directions on packet. Serve curry with Rice and Barley. Top with fresh coriander leaves.
