Method


  1. Combine rice, carrot, pasta sauce and stock in a large saucepan. Cover, bring to the boil, reduce heat to medium and simmer, 30 minutes or until rice is cooked.

  2. Stir through beans, cannelloni beans and chilli sauce and allow to heat through.

  3. Garnish with parmesan cheese (optional) and serve.

  4. Spoon rice into soup bowls, ladel over the soup. Top with pesto and serve with toasted crusty bread.

  5. Tip; You can replace the cabbage with red cabbage, 1 bunch English spinach or kale.
