- Place rice in a saucepan. Add 3 cups cold water and bring to the boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes.
- Meanwhile, place lamb mince, garlic, feta, rosemary and pepper in a bowl and use your hands to mix, then form onto 3cm diameter meatballs.
- Heat oil in a large non-stick frying pan over a medium/high heat. Add meatballs and cook for 5 minutes, until browned all over. Add pasta sauce and oregano and simmer for 10 minutes, stirring occasionally until meatballs are cooked through. Add spinach and stir until just wilted. Serve meatballs with rice and salad.
