Method


  1. Place rice, water and paste in a large saucepan and stir to combine. Bring to the boil, then reduce heat to a gentle simmer. Cover and cook for 15 minutes. Remove from heat and allow to stand 5 minutes. Stir in almonds.

  2. Meanwhile, add oil to a large non-stick frying pan and place over a high heat. Season salmon with salt and pepper. Add to pan, skin side down and cook 3 minutes pressing down firmly with a large saucepan; turn and reduce heat to medium. Cook for 2 minutes longer or until just cooked through

  3. Serve salmon with rice, coriander leaves, cucumber, chilli and yoghurt
