Method


  1. Squeeze rice pouch to separate rice. Tear corner of pouch to vent heat. Microwave on high for 90 seconds (850W). Place rice in a heatproof bowl and add mirin. Stir, then cover and set aside.
  2. Heat oil in a large frying pan over a moderate heat. Cook schnitzels for 3 minutes each side or until golden brown. Drain on kitchen paper.
  3. Divide rice between two bowls. Slice chicken and add to bowls along with avocado and carrot. Top with sesame seeds and nori slices and serve with mayonnaise. Tip: if Japanese mayonnaise is unavailable, use regular mayonnaise.
