Method


  1. Heat oil in a large non-stick frying pan over a high heat. Add chicken and stir-fry for 5 minutes, until browned.
  2. Reduce heat slightly. Add snow peas and chillies and stir-fry for 2 minutes longer.
  3. Add coconut cream, peanut butter, ginger, chilli sauce, soy sauce and sugar. Stir to combine. Simmer, stirring occasionally for 3-5 minutes until chicken is cooked through and sauce thickens.
  4. Meanwhile, squeeze rice pouch to separate rice. Tear corner of pouch to vent heat. Microwave on high for 2 1/2 minutes (850W). Serve satay chicken with rice
