Method


  1. Place rice in a saucepan. Add 3 cups cold water and bring to the boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. Tip: use 450g pack SunRice Microwave Brown Rice, if preferred.
  2. Meanwhile, spray chicken liberally with oil, then coat with Cajun seasoning. Heat a stove - top grill or barbecue hotplate over a medium/high heat. Grill chicken 5 minutes each side or until cooked through. Allow to sit for 5 minutes, then slice.
  3. Divide rice, chicken and all remaining ingredients (except for dressing) between 4 bowls. Serve with dressing.
