  1. Preheat oven to 180C and cook rice using the packet instructions. Cool. For a quicker alternative, you can use our microwave rice.
  2. Lay pumpkin on a baking tray lined with baking paper. drizzle with olive oil and sprinkle salt and pepper over the top. Roast for about 40 minutes or until tender. Cool
  3. Combine all the ingredients in a salad bowl and toss with clean hands. Serve immediately.
