Method


  1. Place brown rice and water in a small saucepan, bring to the boil and simmer until tender and water is absorbed, drain and let cool.

  3. In a small jar shake all of the dressing ingredients and pour over salad, mix well. Set aside whilst cooking prawns.

  4. Toss prawns in olive oil and Za’atar, heat BBQ or grill plate and cook prawns on each side 1-2 minutes until cooked.

  5. Before serving, fold pita into the salad, spoon onto plate, top with prawns and a generous sprinkle of Za’atar.
