Method


  1. Heat oil in a saucepan, add onion, bacon and cook gently for one minute.
  2. Add broccoli, stir and cook gently for two minutes. Add rice and cook for a further two minutes, stirring until rice is well coated and glossy.
  3. Add stock one cup at a time, stirring continuously after every addition, until the stock is completely absorbed before adding more. Continue adding stock until rice is tender (approx. 30 mins).
  4. Stir in sour cream, parmesan cheese and season to taste.
