Method


  1. Place rice, water and paste into a large saucepan and stir to combine. Bring to the boil, then reduce heat, cover and gently simmer 15 minutes. Remove from heat and allow to stand for 5 minutes

  2. Meanwhile, heat oil in a large frying pan over a medium heat. Add onion and capsicum and cook for 5 minutes, stirring occasionally. Increase heat. Add lamb and cook, stirring to break up mince until evenly browned

  3. Add cooked rice, chutney, spinach and cashews to lamb mixture and stir just until spinach wilts. Top with mint and extra cashews. Serve with tzatziki and naan bread
