Method


  1. Heat half the oil in a large pan over a high heat. Add the lamb and cook, stirring until brown. Remove from pan.

  2. Add remaining oil to pan and reduce heat. Cook onions and capsicum until soft. Add cumin, ground coriander, chilli flakes and ginger and cook, stirring for 1 minute. Add lemon rind, tomatoes, apricots and 1/3 cup water. Cover and simmer for 50 minutes, stirring occasionally. Add beans and cook, covered for 10 minutes longer or until lamb and beans are tender.

  3. To cook the rice, in a saucepan, add 1 cup of rice to 2.5 cups of cold water and bring to the boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. If you are not sure how, we have a helpful “How to Cook rice section” to make you a pro.

  4. Serve curry with Rice and Barley. Top with fresh coriander leaves.
