Method


  1. To cook the white rice, in a saucepan, add 1 cup of rice to 2 cups of cold water and bring to the boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. If you are not sure how, we have a helpful “How to Cook rice section” to make you a pro. If you would like to use a brown rice in this recipe, simply add an additional ½ a cup of water.

    Tip: For a quicker alternative, we also have a range of ready rices, that are ready to eat in 90 seconds!

  2. Preheat oven to 160 degrees celcius. Grease a shallow sided 6-cup capacity baking dish (about 5cm deep) with softened butter.

  3. Place baking dish in a large roasting pan. Place eggs, sugar and vanilla in a medium bowl. Whisk with a fork until combined.

  4. Stir in milk, then sultanas and rice. Pour into prepared dish. Pour boiling water into the roasting pan to come halfway up the sides of the baking dish.

  5. Sprinkle custard with nutmeg. Bake 40 minutes or until just set.

  6. The custard should still be wobbly (a knife inserted in the centre should come out clean or with just a little set custard clinging).

  7. Remove from roasting pan and let stand for at least 1 hour before serving. Serve warm or cold.
