Chicken Skewers with Lemon & Herb Rice and Tzatziki
Ingredients
Method
Divide the oil and oregano between 2 bowls. Add chicken to one bowl and onion, capsicum and zucchini to the other bowl. Stir contents of each bowl to coat with oil and herbs. Set aside
Place rice, water and paste into a saucepan. Stir to combine. Bring to the boil. Reduce heat and gently simmer, covered for 15 minutes. Remove from heat and stand for 5 minutes
Meanwhile, thread the chicken onto 12 skewers. Set aside. Preheat oven to 1600C. Heat a large stovetop or barbecue hotplate over a medium/high heat. Add vegetables and cook, tossing occasionally, until tender. Place in an ovenproof dish, cover with foil and place in oven to keep warm. Grill chicken skewers for 4 minutes each side, or until cooked through
Serve skewers with vegetables, rice, tzatziki and mint
Tip: alternatively, skewers and vegetables can be cooked under an oven grill.
