Method


  1. Heat olive oil in fry pan on low heat.

  2. Add olives, semi-dried tomatoes, pinenuts and lemon zest and cook for two minutes or until the pine nuts are slightly golden.

  3. Pour in the lemon juice and cook for a further two minutes.

  4. To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.

  5. Once heated, add rice to the pan and with the parsley and stir. Serve immediately.
